Green goddess dressing got its name from the light green color it has. The dressing is commonly made with sour cream, mayo and some combination of herbs, lemon and anchovies. I love the flavor of tarragon and bite of buttermilk, so I opted to concoct this keto tarragon buttermilk green goddess dressing. The buttermilk lends a bit of the bite that the anchovies would normally give, and the tarragon provides a subtle sweetness depending on what you pair the dressing with. I LOVE to serve this with fresh roasted shrimp, grilled chicken breast, or a crisp romaine chicken salad. The possibilities are endless! Clocking in at 1 net carb per serving, this is a keto dream dressing.
Tarragon
Tarragon is a wonderful herb. It is the star of the French mother sauce, béarnaise sauce. It has a subtle licorice flavor and pairs well with fish, chicken, lobster, shrimp and salads. There are so many renditions of green goddess dressing. I chose tarragon mostly because I love the flavor of this herb. The Italian flat leaf parsley has a delicate flavor that does not overpower the tarragon, and the chives add a slight punch. Cut the tarragon in half if you don’t like a heavy tarragon flavor. You will still get a slight tarragon flavor, but it will be more subtle.
Bulgarian Cultured Buttermilk
Bulgarian cultured buttermilk is thick, full of fats and protein, and has probiotics. It is perfect for this low carb recipe. I am able to find it at my local grocery store (H-E-B). They carry this Borden version. Since we are only using a quarter of a cup, the impact on the overall carb count is minimal. If you are unable to find the Bulgarian buttermilk, regular buttermilk will substitute just fine.
The Execution
This dressing is super simple to whip up. All you need are some measuring utensils, a knife to chop the herbs, a hand blender (like this one), and something to blend everything in.
Cut the tarragon and parsley leaves off the stems. Roughly chop each of the herbs and measure out the proper quantities. Set them aside. In a tall container that you will use to blend, measure out the mayo, sour cream, buttermilk, lemon and garlic. Blend until well combined. Next, add about half the chopped herbs. Blend until roughly combined. Add the rest of the chopped herbs and season with a pinch of salt and pepper. Blend until very well combined.
Season with more lemon juice and/or salt and pepper as needed.
Store any extra dressing in an airtight jar/container with a lid in the fridge for up to one week. Stir before serving.

Ingredients
- 1 cup Sour Cream Daisy
- 1 cup Mayonnaise Duke's
- 1/4 cup Bulgarian Buttermilk
- 2 tbsp Lemon Juice
- 1 tsp Garlic minced
- 1 cup Italian Parsley fresh, about 1 bunch
- 4 tbsp Tarragon fresh
- 2 tbsp Chives fresh

Instructions:
- Trim the leaves off the stems of the parsley bunch and tarragon. Roughly chop the parsley leaves, tarragon leaves and chives. Set aside.
- Measure the sour cream, mayonnaise, buttermilk, lemon juice and garlic into a container. Blend with a hand mixer. You could also use a food processor.
- Add the greens and blend until well blended. Season with salt and pepper to taste. Add more lemon juice as needed.
- Transfer to a dressing jar or container with a lid to store in the fridge for up to one week. Stir before serving.
