Bacon is a tasty keto staple. It pairs wonderfully in this recipe with crunch asparagus. Ketogenic and low carb dieters alike can get their daily dose of greens from this tasty side. We eat Bacon Wrapped Asparagus almost weekly in our house. Serve the side with fish, chicken, pork and beef.
Bacon Wrapped Asparagus Ingredients
This simple side has two ingredients – bacon and fresh asparagus. Small to medium circumference stalks produce the best results. Asparagus has about 1.5 grams of NET CARBS for every 4 ounces. This recipe calls for 1 lb of trimmed asparagus, and will yield five bunches that are just under 3.5 ounces of asparagus each. This tasty vegetable has a lot of vitamin K, iron and B vitamins.
We have used Oscar Mayer Naturally Hardwood Smoked Bacon for this recipe for as long as I can remember. This brand of bacon is fairly thin, and allows you to stretch the bacon around the asparagus bundles with ease. Each slice has only 35 calories and 0 NET CARBS. That’s a win in my book. Wrap the bundles in one or two slices of bacon depending on what you want.
The Execution
Heat the oven to 400 degrees. Trim the woody bottoms off the asparagus stalks. Separate the asparagus into five even piles. Wrap each asparagus bunch in one or two pieces of bacon *(nutrition information provided is based on one piece of bacon per bundle)*.
Grab a sheet pan and a metal cooling rack that is oven-safe (see below) if you have one available. Place the asparagus bundles on the rack. Cooking the bundles on the rack allows the grease to drain into the sheet pan. It prevents the bundles from being overly greasy, and allows the bacon to get crisp during the baking process.
Bake at 400 degrees for 20 minutes, or until the bacon is done and the asparagus is tender. Remove from the oven, and serve alongside your favorite main dish.
Our favorite meat to serve with this is simple oven roasted salmon, but you can get creative!

Instructions:

- Line a baking sheet with foil if desired. Place oven-safe metal cooling rack on baking sheet.
- Trim woody bottoms off of the asparagus. Divide asparagus into 5 equal bunches.
- Wrap each bunch with one piece of bacon. Set bunches on baking sheet.
- Bake for 20 minutes, or until bacon is cooked.
