Smoked salmon is definitely a nostalgia food for me. It triggers so many memories. My father moved to Anchorage, Alaska when I was young. I would fly to see him for a few weeks each summer. He would take me to visit the national parks, small islands, big roaring rivers, and to see the wildlife in the gulf. While visiting, I was lucky enough to spend some time in some small remote villages in the wilderness of Alaska. I got to try many native foods like whale blubber (which was interesting to say the least) and a lot of smoked salmon. This recipe brings that smokey delicious flavor into these Smoked Salmon Mousse Canapes.
The Base
These little two-bite canapes have a cucumber base. This is a great low-carb choice, and provides a good balance to the salty smoked salmon mousse we will be putting on top. I like to peel the cucumbers for these little guys. The lack of peel makes the cucumbers easier to bite into.
For guests that are carb-lovers, you can grab a bag of sea salt or plain bagel chips (for $3.50 or so) at the store to use as a base for some of your canapes.
The Smoked Salmon Mousse
The mousse is a tasty combination of smokey salmon, cream cheese, lemon juice, cream and a touch of horseradish. These ingredients are all blended until nice and smooth, and then piped on the cucumber rounds. Smoked salmon is packed with protein and fat and has zero carbs!. This is a winning combination of flavors that even your non-keto friends will love!
Piping & Garnish
Once the salmon mousse is well blended, I use a piping bag fitted with a larger star tip to pipe on to the cucumber round. If you don’t have a piping bag and tip, you can use a Ziploc bag as a substitute. Just fill your Ziploc bag with mousse, press out the air, and seal the bag. Then snip a small triangle off one of the corners of the bag. Voila! You have a homemade piping bag.
For garnish, I used a small sprig of dill, some red caviar and a non-peril caper for each canape. You don’t have to get that fancy, and a single caper or sprig of dill will work just fine on top. You could even leave it with only the mousse and opt out of a garnish. It’s completely up to you!

Ingredients
- 4 oz Smoked Salmon
- 6 oz Cream Cheese
- 2 tbsp Heavy Cream
- 1 tbsp Horseradish
- 1 tbsp Lemon Juice
- 1-2 whole Cucumber
- 1 pack Dill for garnish
- 1 jar Capers for garnish
- 1 jar Salmon Roe for garnish - optional
- 1 bag Bagel Chips "add-a-carb" option - optional

Instructions:
- Blend all ingredients except cucumber, garnish and bagel chips in a food processor until smooth. Be sure to get the mix as smooth as possible for easy piping later. Once processed, scoop in to a bowl, cover and refrigerate while prepping the cucumbers/bagel chips.
- Peel the cucumber if desired. Slice the cucumber(s) short-wise into ½ inch thick discs. Set the cucumbers on serving plate. If making some with bagel chips, place the desired amount of bagel chips on a serving platter as well.
- Prepare the garnish – if using dill, finely chop and set aside. If using capers, pull some out of the caper liquid and place in a small bowl and set aside. If using roe, open the jar and obtain a skewer, toothpick, or other small utensil that can pull out single pieces of roe.
- Remove the bowl of salmon mousse from the fridge. Spoon mousse into a piping bag fitted with tip of your choice. Be sure the tip is wide enough to potentially push small pieces of smoked salmon through if it is not get blended 100%. I use a wide star tip for this recipe.
- Pipe the salmon mousse on to the cucumber rounds and on the bagel chips if you are using them. Garnish with capers/dill/roe and serve.
Notes:
The mousse by itself is fairly salty. Serving the mousse on a cucumber round or plain (non-salted) bagel chip will cut some of the saltiness and result in a great balance of flavors. The brand and type of smoked salmon you chose can also affect flavor and saltiness.
If you don’t have a pastry piping bag and star tip, get a quart-sized Ziploc bag, put one bottom corner of the bag into a tall glass, and roll the open edges of the bag over the cup. Spoon the filling into the bag, remove from the cup, push the contents to the desired corner, and snip the bag.
