Smoked Salmon Mousse Canapes
A quick and easy-to-assemble recipe for any dinner party. Smokey salmon is paired with cream cheese, cucumber, capers and a dash of horseradish to make the perfect savory canape for any get together.

  1. Blend all ingredients except cucumber, garnish and bagel chips in a food processor until smooth. Be sure to get the mix as smooth as possible for easy piping later. Once processed, scoop in to a bowl, cover and refrigerate while prepping the cucumbers/bagel chips.
  2. Peel the cucumber if desired. Slice the cucumber(s) short-wise into ½ inch thick discs. Set the cucumbers on serving plate. If making some with bagel chips, place the desired amount of bagel chips on a serving platter as well.
  3. Prepare the garnish – if using dill, finely chop and set aside. If using capers, pull some out of the caper liquid and place in a small bowl and set aside. If using roe, open the jar and obtain a skewer, toothpick, or other small utensil that can pull out single pieces of roe.
  4. Remove the bowl of salmon mousse from the fridge. Spoon mousse into a piping bag fitted with tip of your choice. Be sure the tip is wide enough to potentially push small pieces of smoked salmon through if it is not get blended 100%. I use a wide star tip for this recipe.
  5. Pipe the salmon mousse on to the cucumber rounds and on the bagel chips if you are using them. Garnish with capers/dill/roe and serve.
Recipe Notes

The mousse by itself is fairly salty. Serving the mousse on a cucumber round or plain (non-salted) bagel chip will cut some of the saltiness and result in a great balance of flavors. The brand and type of smoked salmon you chose can also affect flavor and saltiness.

If you don’t have a pastry piping bag and star tip, get a quart-sized Ziploc bag, put one bottom corner of the bag into a tall glass, and roll the open edges of the bag over the cup. Spoon the filling into the bag, remove from the cup, push the contents to the desired corner, and snip the bag.
